Tarta cu piersici si afine ”Peach Blackberry Pie”

O tarta extrem de gustoasa si foarte usor de executat, inspiratie Anna Olson, doar ca eu am mai pus si putina nuca tocata marunt ...yuummyyyy !!!/Tasty pie - source of inspiration Anna Olson, just that I added some minced nuts....yummmyyy !!!
Ingrediente/Ingredients:

Aluatul/Dough:
- 400 gr. faina/400 gr.all purpose flour
- ¼ lingurita sare/1/4 tsp salt
- 200 gr. unt rece taiat bucatele/200 gr. unsalted butter, cut into pieces and chilled
- 3 linguri apa rece/3 tbsp cold water
- 1 lingura zeama de lamaie/1 tbsp lemon juice
Umplutura/Filling:
- 7-8 piersici sau nectarine/7-8 peach, peeled and sliced
- 150 gr. afine/150 gr. blackberries
- 100 gr. zahar/100 gr. sugar
- 3 linguri faina/3 tbsp all purpose flour
- coaja rasa de la 1 lamaie/lemon zest
- ½ lingurita scortisoara/1/2 tsp cinnamon
- 1 ½ lingura unt/1 1/2 tbsp unsalted butter
- 1 ou batut cu 2 linguri apa rece pentru uns tarta/1 egg, mixed with 2 tbsp cold water, for brushing
- 50 gr. nuca macinata/150 gr. minced nuts
- 2 linguri zahar tos de presarat la final deasupra tartei/2 tbsp sugar to sprinkle over the pie
Se amesteca faina cu sarea si se adauga untul rece, taiat in bucatele/
Combine flour and salt and add butter


Se mixeaza, dar nu foarte puternic, este indicat sa ramana mici bucatele de unt in aluat, in acest timp se adauga apa in care am pus zeama de lamaie/Mix together water and lemon juice and add to flour. Blend until dough just comes together

arata cam asa, se mai framanta putin cu mana/it will look like that, just use your hands a little
apoi se lasa la rece 30 min./chill, at least 30 minutes, while preparing filling.

Intr-un castron amestecam piersicile (curatate de coaja si taiate felii) + afine + zahar + faina + coaja de lamaie + nuca macinata + scortisoara/Toss peaches and blackberries with sugar, flour, lemon zest, cinnamon, minced nuts

Se imparte coca in 2 jumatati, una se intinde in tava de tarta si cealalta se pastreaza (se pune deasupra sub forma de grilaj)/Divide dough in half. On a lightly floured surface, roll out 1 piece of dough to 1/4-inch thick.

Apoi se toarna compozitia in tava in care am pus coca si se pun bucatele de unt deasupra fructelor/Spoon fruit into pie pan and dot with butter.

Coca ramasa se intinde si se taie in fasii late de cca. 2 cm. Se aseaza fasiile de coca deasupra fructelor (intercalate). Se preseaza bine, cu mana sau cu fruculita./Roll out second piece of dough to 1/4-inch thickness. Using a pastry wheel or paring knife, cut 10 strips of dough 3/4 –inch thick. To build the lattice top, place 5 strips side by side on top of the fruit filling, leaving 1/2 inch of space between them. Fold back 3 alternate strips of dough halfway back. Place a center cross strip laying over the 2 flat strips of dough. Return the 3 folded strips to their flat position. Repeat step 5, folding back the 2 alternate strips and repeat process until you have strips woven in.
Iese ceva in genul asta, dar e loc si de mai bine....Se unge tarta cu oul batut cu apa rece si se pudreaza cu zahar. /Brush pie with egg wash and sprinkle with sugar.

Se coace in jur de 40 – 50 min./Bake for 40-50 minutes

Este gata cand tarta se rumeneste deasupra
Until rich golden brown.

Ardei umpluti ”Stuffed peppers”

Asa de dragalasi sunt ardeii, incat nu am rezistat sa nu fac cativa umpluti.....deocamdata eu ii mananc doar cu ”ochii”.......
Ingrediente/Ingredients:
- ardei/sweet cherry peppers or bell peppers
- carne tocata de vita + porc/minced meat, veal + pork
- ceapa/onion
- ou/egg
- orez/rice
- sare/salt
- piper/black pepper
- bulion/tomato paste
- rosii/tomatoes
- patrunjel/parsley

Am taiat capacele la ardei si i-am curatat de seminte. Eu le las si codita, spal bine ardeiul, tai cu foarfeca putin din codita, dar sa mai ramana cam de 1 cm, asta ma ajuta sa infig capacelul in ardeiul umplut si astfel am siguranta ca nu iese nici o farama de umplutura cat fierb, bolborosesc ei acolo.
Cut off the tops and clean out the seeds. Put the rice, diced onions and oil in a large deep frying pan. Fry the onions using medium heat until they start to soften, then let it cool off. Mix all the ingredients in thoroughly (except tomatoes)
Am calit ceapa tocata cu orezul si am lasat-o sa se raceasca, apoi am adaugat toate ingredientele intr-un castron, mai putin rosiile si bulionul, de ele ne ocupam mai tarziu.

Am umplut ardeii si le-am pus capacelele......iata
Stuff the peppers with the mixture

Intr-o cratita cu putin ulei am asezat ardeii
Place the peppers in a baking dish (sprinkled with some oil) as shown below.
Sosul: am desfacut 2 lingurite de faina in 300 ml. apa + 2-3 linguri de bulion + rosiile mixate, sau taiate bucatele mici (dupa dorinta) + sare + piper
Sauce: in 300 ml. water, mix 2 tsp of flour + 2-3 tbs of tomatoes paste + some diced or minced tomatoes + salt + black pepper
Se toarna peste ardei, cat sa-i acopere, daca mai este nevoie se adauga apa
Pour the sauce over the peppers, if still needed add some water

Se baga la cuptor, la foc mediu, timp de 1 - 1,5 h, pana se rumenesc
Pop them in the oven and bake for 1 hour, medium heat

Saratele magice ”Magic cheese sticks”

Le-am numit asa caci daca apuci si mananci una, nu te mai opresti Photo Sharing and Video Hosting at Photobucket
magic... because you’ll eat it all, just can’t stop !

Ingrediente/Ingredients:
- unt/butter 200 gr.
- branza de vaci/cottage cheese 200 gr.
- faina/flour 200 gr.
- cascaval ras/pressed cheese
- chimen/cumin
- ou/egg
- sare/salt

se mixeaza untul + faina + branza de vaci + putina sare
mix up butter + flour + cottage cheese + some salt

coca obtinuta se baga la frigider pentru 2 ore
put the dough, for 2 hours, in the fridge

apoi se intinde o foaie, nici prea groasa, nici prea subtire...sa zic cam de 3 - 4 mm
flatten out the dough on a lightly floured surface, not to thin or thick, about 3-4 mm

se unge foaia cu oul bine batut, se presara cu putina sare + chimen + cascaval ras
cover the dough with the beaten egg, sprinkle some salt + cumin + grated pressed cheese

se taie betigase, sau orice forme doriti si se baga la cuptor, la foc potrivit, iar cand s-au rumenit....sunt gata ! Super simplu !

Ciorba taraneasca de vacuta ”Veal soup”

Ingrediente:Ingredients:
- piept de vitel/brisket veal
- ceapa, morcov, telina/onion, carrot, celery
- ardei gras, cartof, fasole verde, varza, rosii/bell pepper, potatoes, green beans, cabbage,
- sare, bors magic/salt, Knorr borsch
- leustean/lovage
nu am scris cantitatile pentru ca depinde de gustul fiecaruia, cat de mult doreste sa puna dintr-un ingredient sau altul

am pus carnea in oala sub presiune cam 45 min.
boil the veal for 45 min.

dupa care am scos toate oasele, am taiat bucati potrivite ca marime
cut the meat in slices

in zeama de carne am mai pus sare, am adaugat bucatile de carne si inapoi pe foc cu ea
cand a inceput sa clocoteasca am pus ceapa, telina si morcovul
add salt in the soup + sliced meat, when it starts to boil add choped onion, celery and carrot

dupa 10 min. am adaugat ardeiul gras, fasolea, cartoful si varza
10 min. later add bell pepper (also choped), green beans, small pieces of potato and choped cabbage

iar dupa inca cateva clocote am aruncat si rosiile in oala
and finally add the tomatoes (peeled and cut in small pieces)

am lasat sa mai fiarba la foc mic si apoi am pus jumatate din pliculetul de bors magic, am lasat sa mai dea cateva clocote, am stins focul si am presarat leusteanul tocat dupa care am gustat sa vad daca-i mai trebuie ceva, dar nu-i mai trebuia decat sa fie mancata Photo Sharing and Video Hosting at Photobucket cu putina smantana
let boil for 10 min. and after that add Bors Magic - Knorr, and stir well, turn off the burner and add the choped lovage, taste it and eat it with 1-2 tbs. of sour cream

Conopida la cuptor

Ingrediente:
- 1 conopida (marimea conopidei depinde de familie)
- unt
- smantana
- cascaval
- piper
- sare (foarte putina, isi ia sare si din cascaval)

se desface in buchetele, mai mici, mai mari, dupa preferinte
se spala bine, apoi se tine in apa cu sare timp de 30 min. pentru a se curata de toate impuritatile

se fierbe (in jur de 10-15 min. la foc mic) in apa cu sare, in care am pus si 2 lingurite de faina (astfel conopida nu-si schimba culoarea, ramane alba si frumoasa)
se pune in cratita in momentul in care apa clocoteste
apoi se pune la scurs pentru 5-7 min.
ungem o forma yena (sau orice alta cratita) cu unt

presaram cascaval, cat mai generos, cu cat mai mult, cu atat mai buna iese in final

smantana si putina sare + piper (sarea si piperul se pot amesteca cu smantana, daca va este mai usor asa)

se pune un strat de buchetele apoi iar cascaval + smantana, sare, piper
apoi al doilea strat etc.
iar ultimul strat se compune din cascaval smanatana si bucatele de unt
si bagam la cuptor pana se rumeneste, cam asa
